Method
Whisk the cocoa and sugar with a splash of milk into a paste.
Add the remaining milk and chopped chocolate; warm over medium-low until steaming and smooth.
Remove from the heat and stir in the Irish cream.
Pour into a mug and top with whipped cream.
Tips
Add the liqueur off the heat so the alcohol doesn’t cook off unevenly.

Storing and reheating
Leftover hot chocolate keeps in a covered jar in the fridge for up to 3 days. Reheat gently on the stove or in the microwave, whisking well: the chocolate settles as it cools. A skin on top is normal; whisk it back in.
