Method
Pull the espresso (or brew strong coffee) into a mug.
Immediately stir in the cocoa, chopped chocolate and sugar until melted and smooth.
Steam or heat the milk until frothy (or shake it in a jar and microwave 30 seconds).
Pour the milk into the mug, holding back the foam, then spoon the foam on top.
Tips
No espresso machine? Use ½ cup strong coffee or 2 tsp instant espresso in 2 oz hot water.

Storing and reheating
Leftover hot chocolate keeps in a covered jar in the fridge for up to 3 days. Reheat gently on the stove or in the microwave, whisking well: the chocolate settles as it cools. A skin on top is normal; whisk it back in.
